Where in the hell did I go to? Updates on Updates.
Summer is nearly over and I didn't do anything for this podcast in all that time. Now it's time to do the part of my real job that is hard but doesn't mean I'm giving up. Thank you as always, for listening to this podcast.
Sometimes you just have to make Queso
Supply Chains issues are real. When you can’t get a delivery of quest, the show must go on. Texas A&M made all their Queso from scratch. We would make 60-80 gallons per Football home games, we dubbed it the 8 hr Queso. Having to gather and empty so many bottles of milk and cream was just as long as unwrapping cheese and sometimes having to process the cheese by way of shredding to make it more consistent in viscosity. Then, you get the Rotel (canned tomatoes and chillies) open and dump it in from a #10 can, or sometimes you get small can and have to open 96 16fz cans. When done right, it’s fucking amazing on chips or whatever.
