Technique comes from so many places. This three person observation comes from Luis Cuevas, Andrew Rodriguez and John Sedlak. We go over Techniques learned from others and self, but there is a twist on how personal things can get.

Cherry Peppers for a Dish

Way back in July 2019… Let that set in.

Summer time is the only time I get to work on the next seasons worth of food and while working on a new dish for suites I took a few pictures.

It’s best to take a picture of all the steps for success and training; I guess also memory..

This went with a braised pork butt and grilled bread. Took many versions to nail down the idea, but in the end such a simple dish made for such a wonderful experience.

Dang!!! I'm really doing it! Welcome back, this episode is about the little things that count. Those moments that come that seem like "no-big deal" moments tend to be the most satisfying. Old Laptop

This laptop has been by my side thru thick and thin.This one laptop is/was crucial to most 55 recording of music that I have. 55 uploaded music that is, there are so many damn files of recordings. Versions of different versions.

The Music I have used for every season, at one point, was run thru this computer'; not because it’s awesome but because it’s all I had to use.

Sometimes the minor wins are worth the time.Even on an old ass shit computer.

Side-note: I wrote inspirational sayings on my laptop to keep me going. It really helped. Check out My Soundcloud the band title I use is Between you and I, under the name Back The Pong. Please enjoy.
